The country’s winemaking heritage can be traced back thousands of years, to the Thracians, and a key part of its more recent vinous renaissance is Villa Melnik, a 30-hectare estate where a centuries-old history has been revived, its new gravity-based winery opening in 2013. Dug into the hillside, tastings here offer views out across valleys ripe for hiking and biking, or even paragliding, and two-hour tours are led by the family, who will happily personalize your experience.
