Nestled in the foothills of the Sredna Gora mountain range, the Midalidare Estate was founded in 2009 and encompasses four vineyards, a boutique hotel and spa, gastropub, and waterside chalets for fishing and awe-inspiring walks. Day guests experience the easternmost winery, all tours including a ‘Library of Varieties’ formed of young vine examples of all major grape types grown, for an immersive education into the terroir and methods that go into the sustainably-focussed red, white, rosé and (more recently) sparkling wines. The charming hotel is in the nearby village of Mogilovo, with summer dining in its beautiful gardens and an ice rink come winter. The spa offers hydromassage, a Roman bath, hammam and wine therapy with tennis, volleyball and football available for sports enthusiasts, who can also watch on the big screens of the estate’s pub. Rock fans should look out for the annual three-day music festival.
