A mystical aura fills the air of this feng shui winery watched over – so they say – by the guardian angels that also grace the labels. Calming water fountains contrast the ferocious flames of Francis Mallmann’s open fire pits at destination restaurant, Fuegos de Apalta, where a meal is one of many gastronomic add-ons to vineyard tours (others include picnics, stone baked pizzas and sommelier-guided tastings). In the cellars, you’ll hear premium wines being serenaded by Gregorian chants whilst up above, a 6km botanic hiking trail takes in valley views and more than 100 species of plants.
