Gravity-fed wineries might be all the rage now, but Seppeltsfield’s gravity cellars were conceived in 1888 by the founders’ son. Restored and revived in 2010, they can be viewed after walking the length of the Centennial Cellars, where the estate’s signature tawny port-style wine is aged for 100 years before release. With an unbroken chain of vintages dating back to 1878, a private ‘Taste Your Birth Year’ experience walks you to your birthday barrel to sample the liquid directly from it. See where it came from via Segway, gliding across gardens and the sweeping contours of the terraced vineyards growing old bush Grenache vines up to 80 years old. Tastings take place in circular pods centred around a slate fireplace, with artisan coffee at Octeine and contemporary dining at Fino restaurant. A veritable village, elsewhere you’ll find the Jam Factory arts and crafts studio, and a photography gallery.
