Dare to dream: Sommelier José María Ruiz dared to dream. Over three decades ago Pago de Carraovejas was founded to create great wines in a region that José María felt had massive potential. The initial winery was founded with just nine hectares but with the vision of becoming a benchmark within the Ribera del Duero. Today it has 180 hectares of vines and a futuristic, gravity-flow winery. This dream is now shared by all at Carraovejas; this means creating unforgettable experiences, committing to the unique qualities of the Carraovejas Valley and searching for the highest quality, utilising the cutting-edge whilst respecting tradition, with the aim of providing expressions that will be remembered, always.
Nothing but the best: Its vineyards of Tinto Fino (vernacular for Tempranillo), Cabernet Sauvignon and Merlot are located at an average altitude of 850m. Slopes are steep, some more than 30 percent, some terraced. Viticulture is adapted according to the terrain; from traditional bush vines to neatly trellised rows. Grapes are are triple selected before vinification: first in the vineyard, then a double selection at the sorting table – bunch and berry – so that only the finest grapes enter the winery.
Tourism at Pago de Carraovejas shows exquisite attention to detail. Their aim is to ensure visitors enjoy an immersive experience by living for a couple of hours as part of the day-to-day life of the winery. Even children are catered for through their Evi Experience, made for the youngest members of the family so they too may learn about the countryside and the magic of turning bunches of grapes into bottles of wine.

Seven wines each paired with a gastronomic dish from their Michelin-starred Ambivium restaurant.
History and vanguard: Enjoy a two-hour hour tour of the winery and vineyards concluding with a tasting of four wines, paired with four gastronomic delights from Ambivium Restaurant.
