Founded in 2003 but with vines tracing back to 1923, Melipal respects its old (mainly Malbec) vines with minimal intervention and broadly organic principles (though not formally certified), farming plants such as agave in addition to grapes for biodiversity. Visitors can learn all about these practices on guided tours, with cooking classes and various tasting options available. With the snowy peaks of the Andes in the background and a geometric lake surrounding the diagonal lines of the contemporary winery, the restaurant makes a prime lunch spot, the food paired with wines from the full range, including the Melipal and Ikella lines, and those from parent company Achaval Ferrer.
